    From the beautiful hillside vineyards of the Piedmont region of Northern Italy, Stella Rosa Green Apple is crafted in the small village of Santo Stefano Belbo. The Riboli Family has created this special blend of several aromatic grape varietals including Moscato Canelli.
    The grapes are harvested, pressed, centrifuged, and then held cold as juice at 28 degrees Fahrenheit. The juice is fermented at various intervals throughout the year. This allows for the wine to remain fresh and delicate year-round. The Riboli family uses this technique to capture the natural flavors of ripe green apple.
    Stella Rosa Green Apple contains natural carbonation. The juice is fermented in Charmat-style, pressurized tanks. As the alcohol is created, so is the carbonation. Once the desired sweetness is achieved, the wine is centrifuged and bottled. The alcohol level stays at approximately 5.5% and contains 10% residual sugar.
    Its natural acidity and low pH strike the perfect balance with the wine’s natural sweetness.

    The grapes for the Brut Reserve come from prime vineyards throughout Champagne, with approximately 50% coming from the Taittinger Estate.

     

    Produced each year from the first pressings of Pinot Noir, Pinot Meunier and Chardonnay this is the definitive cuvée of Champagne Taittinger. It is a carefully balanced blend of wines from up to twenty-five different ‘crus’. It also includes a proportion of reserve wine to ensure consistency from year to year. Prior to release the Brut Reserve is aged for 3-4 years giving the wine depth whilst allowing the component parts to become fully integrated. Such a high proportion of Chardonnay is seldom found among the great Champagnes.

     

    Tasting Notes:

    A brilliant golden straw-yellow colour. The bubbles are fine. The mousse is both discreet and persistent. On the nose, very expressive and open. It is both fruity and bready, exuding aromas of peach, white flowers and vanilla pod.

     

    On the palate, this lively fresh wine is at once in harmony. This is a delicate wine with flavours of fresh fruit and honey.
    Aged for three to four years in the cellars where it achieves perfect maturity and well-developed aromatic maturity.
